Those instructions are more complicated than he expected, but, well, he's still the best choice for this. If something does go wrong, at least he won't die. Not that he expects anything to, but you can never be sure what might interfere.

So Percy folds up that blindfold and carefully wraps it around Liz's head, tying it and adjusting it a little to make sure that her vision is entirely blocked. Two of the apples get skewered as he makes his way to the target, the third getting put on his head once he's there, and he follows the rest of her instructions to a T.
